Callaloo Rice
I tend to be really meticulous with how I go about uploading recipes on this blog. I am so particular and exacting in my standards that often times many of my best recipes never make it here. SWhilst some are indeed being saved for a cookbook, I have to say that the time restraints have gotten the better of me over the years. ome recipes have been ingrained in my mind but I haven’t uploaded them because I haven’t gotten the time to do a proper photoshoot for them.
Often times I am cooking these dishes for others either in a class or a private dining experience and there is just not enough time to pause to do a whole food photoshoot in the natural flow of things. I have missed this space… to write and share recipes and so much more… FEEDing you and FREEing you by feeding your body, soul. spirit and pocket. This is one of one of those recipes that does all the above.
It just hits every spot. Especially the foodie spot.
What is Callaloo?

Callaloo Rice
This Callaloo Rice is a perfect blend of inherently Caribbean flavours. Made popular in yonder years in traditional Jamaican cookery, this is making a resurgence into modern Caribbean fusion cuisine due to the pioneering work of Caribbean foodways expert, Kari Heron. This recipe will delight any dinnery party.
Ingredients
- 2 cups Jasmine rice
- 2 cups fresh callaloo, washed and finely chopped
- 2.5 cups water
- 1 tsp Himalayan Pink Salt
- 2 tsp Maggi Season Up All Purpose/ I bouillon cube
- 2 stalks scallions/green/spring onions
- 3 stalks thyme
- 1 teaspoon whole allspice
- 3 cloves garlic
- 1 tbsp cold pressed coconut oil
- 1 whole scotch bonnet pepper
Instructions
Measure, wash and drain rice in a sieve.
Add rice to Ninja Foodi presser cooker along with other ingredients
Set to Pressure on Hi for 2 minutes.
Affix Pressure Lid. Ensure CLOSED vent
Start
Once finished, allow to remain untouched for 10 minutes. After 12 minutes, move the pressure valve to VENT.
Once all steam is released, open and remove cooking pot.
To modify for stovetop
Measure, wash and drain rice in a sieve.
Add rice to pot along with other ingredients
Cook on high heat just until the liquid reduces to just below the top of the rice.
Add a sheet of baking parchement to the top of the pot overhanging the lid, then press the lid on to cread a tight seal with the parchment paper.
Immediately reduce heat to almost off and let it steam unopened for another 10 minutes then tunr off the stove and leave unopened for another 5 minutes.
