It’s been a while since I posted a new recipe here. I’m making up for that with this magnificent Best Ever Caribbean Vegan Soup Recipe! I have posted other blog content posts, but not recipes. There are reasons for that. I knew you already have access to hundreds of recipes to cook through and share on this blog, so I decided to shift efforts to implementing recession-proof strategies for my business.
I have focused on my cooking classes, monthly Membership Club, and mentorship programmes for leaders and content creators. But don’t think for a minute, that I have stopped developing recipes!
Consequently, I create new recipes at the drop of a hat, even in a live, in-person cooking class, like this Vegan Soup. I’m grateful that my gift of creativity comes from a well that never runs dry.
Nevertheless, what I have been running dry on, is time. I wish it were my favourite herb (thyme).. oh my how corny Kari lol but yeah, as a solopreneur and now head of a single-parent household, I have more ideas than I have time to execute.
And this is why I have been focusing on scaling so that I will be able to greater serve you more! But man have I missed you!

It’s time to prioritize self-care
I have a confession. I have not only neglected to post regularly on this blog, over the past two years, but I have also neglected me. Again, I love taking care of myself but when resources are mega scarce, we do the best with what we have. In Jamaica, we have a saying “where it manga it pop off” meaning, you do as much as you can with what you have until you have nothing left.
Having gone through most adjustments, I have felt the pull to really get back to my own wellness project. It’s time to resume my healing and wellness journey. And what food signifies healing and soothing more than soup? None!
Here you go!
I made 5 things in this cooking class, and I can guarantee you, this was the highlight on everyone’s palette, including the diabetic in the class. I love the challenge of developing scrumptious recipes that are also very healthy for all. This one hit the spot!
It’s the perfect soup as a meal or as a starter for a more lavish and lengthy meal. Make a large batch and refrigerate in portion sizes and enjoy for up to 3 days later.
Those so inclined may serve with some fresh bread of choice. And those who want to lower the carb count, can remove the corn. To make this fully diabetic-friendly and keto, I removed the portion for my client from the pot before. Adding the corn to the other batch. The corn does add another beautiful layer of flavour to the stock but it is ultimately not critical.

Tasty Vegan Soup
This scrumptious vegan soup will be your best soup recipe ever! It is super healthy and is perfect for all diets. This is Whole30, glutenfree, dairy free written. While the corn adds another layer of flavour, you may leave it out to make this recipe fully keto, low carb and diabetic friendly. Leaving out the corn doesn’t make the soup any less delectable. It just renders it Primal, Atkins and diabetic-friendly.
Ingredients
- 3 Cho Cho / chayote/ chow chow/choking/christophine
- 2 lbs/1kg pumpkin (kaboucha, kent or other firm varieties)
- 4 stalks celery, cubed
- 1/2 carrot, cubed (leave out to lower carb count or add more as needed).
- 4 stalks scallions
- 1 inch piece of fresh ginger, halved
- 4 stalks fresh thyme
- 6 cloves garlic
- 5 Knorr vegetable bouillon
- 1 heaping teaspoon whole allspice
- 1 tsp Himalayan pink salt
- 1 green or yellow scotch bonnet (left whole/ substitute with Aji pepper
- 14 cups water
- 2 fresh corn on the cob cut into about 5 pieces each.
Instructions
- Bring water to boil in a large pot like my Staub that goes from stove to table and perfect for keeping soup hot and looks great on the table (placed on a trivet).
- Cut pumpkin into 2 inch pieces,
- Roughly smash garlic and scallions
- Peel Cho Cho, cut in half and remove seeds and cut into wedges.
- Add all the ingredients to the pot except the Cho-Cho and corn.
- Cover and simmer for 45-60 mins. Stir at intervals to help the flavours to integrate. Be careful not to puncture the scotch bonnet pepper.
- Add Cho-Cho amd corn and cook for another 10 mins.
- Let soup sit for another 10 - 30 minutes for flavours to intensify.
- Remove scotch bonnet before serving.
- Taste for seasoning and and add salt if necessary.

Love the ides of this vegan soup. The only ingredient I can’t find here in Italy is chayote. Can you suggest an alternative or do you think it would work without?
