This Coconut Rice recipe was developed in and for my 5-star rated Caribbean Cooking Class experience. I host them weekly both in person and in private virtual groups for corporate team building, b2b relationship building and even family and friend reunions and parties. I have been doing them for nearly two years live from Aruba, and I have been blessed by the way people are able to find community, food and fellowship that fills their souls right from my kitchen. Coconut rice? Yes but first, story time
SO, as you may have noticed, I have been extremely busy.
Life is just different these days. The years 2020 and 2021 have certainly been unprecented and different times call for different measures.
And bills need to be paid.
A new thing; streams in the desert
Five or six years ago, I heard a whisper saying “multiple income streams.” Since then, I have been adding more and more as best as I could with the resources I had.
This past two years, has seen that mission go in overdrive.
For years, I subsidized this blog and all my free digital content as the platform for which I earned high paying clients booking my services in food styling, food photography, content consultancy and a few select executive and business coaching clients. I have since had to change that. My business model was too heavily invested in trading time for money and not enough invested in developing passive streams of income.
Having invested all of TEN YEARS pubslishing Chef and Steward, it is its own platform and must be self-sufficient and income earning on its own. Period.
As a single, divorced mother, diversification of income streams is now essential. There are but 24 hours in a day and as a mom of a young child and a still small business, I have to find ways to earn when I am busy trying to attend to other critical needs- like parenting solo.
So, for the last 2 quarters of 2021, I am focused on investing my resources in two major projects, –the launch of my new Merch store and my very first digital cookbook!

Coconut Rice
Many have said this is the best rice they have ever seen. This Cocconut Rice recpie is one that was created for use in my Caribbean Cooking Class and has been requested over and over by others. This recipe is for using a Ninja Foodi Pressure Cooker. To cook using other pots, methods, modify accordingly.
Ingredients
- 2 cups white rice
- 2.5 cups water
- 1 tsp Himalayan Pink Salt
- 2 tsp Maggi Season Up All Purpose
- 2 stalks scallions/green/spring onions
- 3 stalks thyme
- 1 teaspoon whole allspice
- 3 cloves garlic
- 1 tbsp brown cane sugar
- 1 tbsp cold pressed coconut oil
- 1 packet coconut milk powdger (50)g
- 1 whole scotch bonnet pepper
Instructions
- Measure, wash and drain rice in a sieve.
- Add rice to Ninja Foodi presser cooker along with other ingredients
- Set to Pressure on Hi for 2 minutes.
- Affix Pressure Lid. Ensure CLOSED vent
- Start
- Once finished, allow to remain untouched for 10 minutes. After 12 minutes, move the pressure valve to VENT.
- Once all steam is released, open and remove cooking pot.

If you use brown rice the water and method must be adapted.
