Beat Flu Silly Soup

This immune booster will help you fight of the flu and soothe symptoms if you have it.

Ingredients

  • 4 Chicken Thighs (bone in)
  • 1 tbsp Virgin coconut oil
  • 1 head garlic (yes the whole head)
  • 4 cups Chicken stock
  • half Lemon
  • 500 grams Cabbage roughly chopped
  • 2 stalks green onions, scallions, spring onions
  • 1 cup water
  • pepper to taste
  • salt to taste

Instructions

  1. Season Chicken with salt and pepper and allow to marinate for 30 minutes

  2. Chop off just the tips of the cloves of the head of garlic. Place garlic in oven at 185 C or 350F

  3. When chicken is browned. add chicken stock, then top up with water and cover. Bring to a boil and then reduce heat to a simmer. Cook for about 40 mins. Chop cabbage. Check on garlic.

  4. When the garlic starts to loosen and you see the cloves coming out in a puree form, it is time to remove them.

  5. Squeeze the garlic into pot with chicken and stir well

  6. Add cabbage and chicken stock, and top up with water. Add green onions. Taste. adjust seasoning by adding salt and pepper or by increasing water.

  7. When cabbage is cooked, squeeze half lemon in pot and remove from heat and serve.
